Scrambled Egg with Green Onion

Another budget friendly recipe that is perfect during pandemic. Because now we will only do grocery  biweekly, we need to think wisely about what type of vegetables we purchase, of which have a longer shelf life. Napa, broccoli, carrot, kale are on the list. For sure, green onion is also one of them. With you wrap the green onion with a damped paper towel, it can stay green and fresh for more than a week in the fridge. I use the green onion to make scrambled eggs, adding a little fibre and green to the diet.

INGREDIENTS:
5 stalk Green Onion
8 Eggs
1/3 teaspoon Salt
1/3 teaspoon Sugar
1/3 teaspoon White Ground Pepper
3 tablespoons Vegetable Oil

DIRECTION:
1. Whisk the eggs together; cut the green onion into rounds.

2. Heat up vegetable oil over high heat. Add green onion and fry it for 30 seconds.

3. Add the egg. Scramble until the egg coagulates. Turn off the heat. Serve it with steamed rice or sandwich bread. Or just as it is.

Scrambled egg with Tomato on Tofu

For sure we limit our grocery shopping to the minimum during the pandemic. Now we will only go once a week. In the first week, we usually eat like a king because the food is newly stocked up. However, the food becomes scarce and cooking becomes tricky when it comes to the second week. This week is just the week that we have only two tomatoes, a few eggs, and a block of tofu left in the fridge. Along with a can of spam, I cooked this dish to add some extra nutrient to our diet. It is super easy to make and I hope you will enjoy this recipe.

INGREDIENTS:
4 Eggs
2 Tomatoes
1 Block Tofu
3 tablespoons Vegetable Oil
1/3 teaspoon Salt
1 tablespoon Sugar
12 teaspoon Cornstarch

DIRECTION:
1. Drain the tofu; cut it into small blocks. Reheat them in the microwave and then place them on the serving plate. Set aside.

2. Cut the tomatoes into wedges; whisk the eggs.

3. Heat up oil over high heat. Add egg. Fry until it is coagulated.

4. Add tomatoes, salt, and sugar. Continue to stir fry until the tomatoes are heated up.

5. Mix a little water with the cornstarch. Stir it into the tomato mixture. Cook a bit more until the sauce is thicken. Turn off the heat.

Spicy Marinated Egg

These marinated eggs make a very comfort breakfast or late snacks for me. One or two eggs are enough to finish a large bowl of rice. That’s why they also have a name, called ‘rice thief’. I think it’s so true. I usually make 7-8 at a time so that they can last for a week (I keep them in the fridge).

When you serve, make sure you serve with some of the soy sauce and onion, and drizzle some good quality of sesame oil over the rice. Yum! I hope you enjoy this recipe.

INGREDIENTS:
8 Eggs
1 Onion
5 tablespoons Red Chili Flakes
1 tablespoon Chili Powder
1 cup Light Soy Sauce
1/4 cup Sugar
Sesame Oil (to serve)

DIRECTION:
1. Bring a pot of water to a boil over high heat. Add eggs; boil them for 6 minutes. Drain the water. Submerge the eggs in cold water until they are completely cool off. Carefully shell the eggs.

2. Peel the onion. Then, cut it into dices.

3. In a large zip lock bag, add the onion and the rest of the ingredients. Rub it until it is mixed evenly. Add the eggs. Zip the back. Refrigerate the eggs at least 12 hours before using them. Enjoy them with a bowl of steamed rice.

Scrambled Egg with Onion

These days we only do grocery biweekly, trying to stay away from the crowded places and people to prevent Coronavarus. It is really hard to think about what can I put on the table though, especially on the second weeks. Most of the vegetables can't be kept in good shape more than a week. So on the second week, I mostly rely on the onion, potato or Napa. Have you tried scrambled egg with onion before? The onion is so sweet and it gives crunch to the egg. It is delicious.

INGREDIENTS:
1 Onion, peeled and sliced
8 Eggs
1/3 teaspoon White Ground Pepper
1/3 teaspoon Salt
1/3 teaspoon Sugar
2 tablespoons Vegetable Oil

DIRECTION:
1. In a bowl, whisk together eggs, white pepper powder, salt, and sugar.

2. Heat up the oil over high heat. Add onion. Fry until fragrant; about 1 minute.

3. Add egg; scramble until the egg coagulates. Transfer it quickly to the serving plate.

Stir-fried Tomato Egg |

It was one of the very first dish I learned to cook when I was a child. Back then my parents both worked full time and many nights we needed to cook for ourselves. Leaving children alone at home was so common that people wouldn't even be wary about it. It was the time, I had a lot of opportunities to experiment in my childhood kitchen.

Although I am the middle child, I was always the person in charge of the kitchen. The simple reason was that my sister'd rather occupied with things more interested her than cooking; she was pretty happy when I offered to cook. And my brother was basically just too young to be in the kitchen.

Very soon, I discovered that I could use the rice cooker to make many things other than cooking steamed rice - scramble egg, fry luncheon meat, noodle soup. So I'd never bothered to pull out my mom's big, heavy wok onto the stove. That rice cooker lasted only for a summer. Many years later, I still remember my mom's angry face when she was pointing the scorched egg and the scraped bottom of the rice cooker at us.

I don't use rice cooker to make tomato egg now. Just like my mom, I use a wok or a pan. However, this sweet memory always steeps into my head whenever I cook this dish. The story belongs to this dish, and I always believe that a lovely dish must have a lovely story.

Hope you enjoy this recipe.

3 Tomatoes, big
6 Eggs, large
1 tablespoon Chinese Cooking Rice Wine
1/3 teaspoon Salt

2. Heat up vegetable oil over medium-high heat.  Add tomatoes and fry them until they are slightly softened; about 2 minutes.

3. Pour in the egg mixture.  Continue to fry until the egg curds.  Remove the pan from the heat immediately.

Lemony Chicken Soup |

My son said he wanted to be in the photo with this beautiful looking soup that's made for him. So sweet.

INGREDIENTS:
1 Chicken, whole, skin off
2 Carrots, peeled and cut into chunks
1 Onion, cut into chunks
1 Leeks, cut into big pieces, both white and green parts
8 cups Water
1/2 cup Brown Rice, rinsed
4 Eggs
1/2 Lemon of juice and zest, small
1 bunch Dill, fresh
1 tablespoon of Sugar (to balance the sour)
Salt to taste
small pinch of sugar (optional)

DIRECTION:
1. In a big pot, add water, chicken, carrot, onion, leek, two twigs of dill.  Bring it to a boil over high heat.  Reduce the heat to medium; continue to boil for another hour without covering.

2. Remove all the ingredients from the pot; drain well.

3. Scoop out a cup of chicken soup from the pot and allow it to cool.

4. Meanwhile, add the brown rice to the pot.  Continue to cook over medium heat until the chicken stock reduces in half.

5. Shred the chicken; set aside.

6. In a small bowl, zest and squeeze the lemon; set aside.

7. Then whisk the eggs into the lemon juice.

8. Add a spoonful of egg mixture to the reserved chicken stock one at a time; mix well. The stock should be cool at this point; otherwise the egg will be cooked and the soup will not be milky looking.

9. Slowly add the reserved chicken pot back to the boiling chicken stock.

10. Add the shredded chicken and vegetables back to the pot and stir until heated through.  Season it with salt and sugar.  Remove the soup from the heat.  Add more dill before serving it if desired.

Scrambled Egg with Zucchini |

Scrambled egg is amazingly easy to make. It can be put together in less than 10 minutes.  It can go with most of the vegetable or meat that's on hand, but it is also super tasty on its own.  This recipe is one of those that starts with "when you have half of a zucchini left in the fridge" ...

We love this recipe, and think the turmeric does a fantastic job adding an exotic flavour to it.  It is a pleasure to serve it as a light dish on a weeknight or a full brunch on the weekend.

INGREDIENTS:
1 Zucchini, small
6 Eggs, large
1/3 teaspoon Paprika
1/2 teaspoon Turmeric Powder
1 teaspoon Chinese Cooking Rice Wine
1/3 teaspoon Salt
2 tablespoons Vegetable Oil

DIRECTION:
1. Cut the zucchini into sticks; set aside.

2. In a bowl, whisk together eggs, cooking wine, paprika, turmeric, and salt until smooth.

3. In a non-stick pan, heat up oil over high heat.  Add zucchini; stir fry until it becomes slightly softened.  Turn down the heat to medium-high.  Add egg mixture.  Continue to stir fry until the egg reaches to the desired texture; about 3-5 minutes.  Serve.

Basic Cornbread |

Cornmeal is made of a type of corn called dent corn. Unlike the sweet corn we usually use for salad or barbecue, dent corn has little sweetness and contains higher starch. After drying and various grinding processes, dent corn becomes cornmeal that is fine to coarse in consistency, depending on the range of grinding. Cornmeal is widely used for making cornbread, polenta, or tortilla, and it comes in yellow or white colours.

Actually, cornbread originated with Native Americans. Before the European settlers set foot on America, the Natives had already had a long history of using the dried cornmeal to make cornbread as their staple.  But the original recipe is very basic, combining just cornmeal and water, or sometimes lard.  So the taste was rather bland. Later the Europeans adopted the recipe and added milk and butter to make it more flavourful.

We should really thank the Native Americans.

INGREDIENTS:
1/4 cup Butter
1 cup Milk
2 Eggs, large
1.25 cups Yellow Cornmeal
1 cup All Purpose Flour
1/2 cup Sugar
2 tablespoons Baking Powder
pinch of Sea Salt

DIRECTION:
1. Preheat the oven to 350F.  Melt butter in microwave; let it cool.

2. In a large bowl, whisk two eggs.  Add melted butter and milk; whisk again until it is combined.

3.  Add all the remaining ingredients.  Gently mix until it is incorporated.

4. Line a baking tray with parchment paper.  Pour the mixture into the tray and smooth the surface with the back of a spoon.

5. Bake it for about 15-20 minutes, or until the corn bread rises up and is firm.  Let it cool completely on a rack before slicing them.

做法:
