Leek and Shrimp Light Soup | 大蔥蝦湯 

Ingredients: (yield 4 servings)
3 Leeks (white part only)
1.5 cups Carrot, sliced
13-15 Shrimp, deveined and unshelled
7-9 Mussels
4 cups Chicken Broth
1 cup Whole Milk
1 teaspoon Paprika
2 tablespoons Butter
Black Pepper to taste
Sea Salt to taste


材料:(4人份)
3 大蔥 (白色部份)
1.5 杯  紅蘿蔔,切粒
13-15 隻   蝦,去腸和殼
7-9 隻   青口
4 杯   雞湯
1 杯   全脂奶
1 茶匙   紅甜椒粉
2 湯匙   牛油
黑胡椒   調味
海鹽   調味

Ingredients:
5 pounds Chestnuts (I prefer Italian and Korean, but you can certainly use others)
1/2 cup Brown Sugar
1.5 cups White Sugar
1 cup Water (but it should be enough to cover all chestnuts on the first day)
1 tablespoon Vanilla Paste

How to make Soft Boiled Egg




A soft boiled egg is an egg with a custard-like egg white and a yolk that is warm and runny.  It requires only water to cook, the technique, however, needs some time to experiment and practice.

In my experience, the cooking time for a soft boiled egg can vary.  It depends on the thickness and the material of the pot, the style of the stove, or even the hardness of the egg shell.  Generally, the cooking time is within 4 minutes 30 seconds to 6 minutes over medium-high heat.

This recipe will illustrate the process of making the eggs in a small batch of one to three eggs. If you need to add more eggs, a longer cooking time will also be needed.

Red Wine & Farm Beet Marmalade | 紅菜頭甜醬




Marmalade is a type of sweet preserve similar to jam or jelly.  Other than the traditional marmalades that are made of citrus, vegetables that have sweet notes, like onion, tomato, or beet, are also getting popular in the marmalade world.  Spread it on your toast or cracker as a change for the jam and I am sure you will love it.

Ingredients:
2 cups Red Farm Beets, grated
2 cups Yellow Farm Beets, grated
1.5 cups Brown Sugar
80 gram Unsalted Butter
1 cup Red Wine
1/4 cup Red Wine Vinegar
1 cup Water
