Blueberry Yogurt Pancake 藍莓乳酪班㦸


INGREDIENTS:
(make about 10 -15 pancakes)
5 Eggs
1 cup Milk
1 cube Yogurt (I used strawberry, but vanilla or plain is fine)
2 tablespoons Vanilla Extract
1/2 cup Butter, melted
1 tablespoon Baking Powder
20 Blueberries, flesh
2 cups Flour

DIRECTION:
1. In a large mixing bowl, whisk the eggs together. Add in milk, yogurt, vanilla, and melted butter; mix again.

2. Add baking powder and flour. Gently mix until it becomes batter. Do not over mix it; otherwise the pancakes come out too hard.

3. Add the blueberries. Gently mix it again. Leave the batter for about 10 minutes.

4. Heat up a non-stick pan over medium heat. Add a few spoonfuls of the batter. Let it cook until there are some bubbles forming on the surface. Flip the pancake over and cook for another 3 minutes. Transfer it to a plate. Repeat the process until the batter finished. Serve the pancake with the syrup or jams of your choice.

*Since we add the butter to the batter, there is no need to add extra butter when cooking the pancakes. As long as you heat up the pan before adding the batter, the pancakes won't stick to the pan.

Potato Pancake 簡易薯仔薄餅


This pancake is little crispy outside and soft and chewy in the inside. We serve it as side dish at home along with steamed rice.

INGREDIENTS:
2 Potatoes (any kind)
1/2 Onion
2 Green Onion, cut into small pieces (optional)
1/4 cup Sweet Potato Starch (Tapioca starch)
1/2 teaspoon Salt
Vegetable Oil (for frying)

DIPPING SAUCE:
3 tablespoons Chinese Black Vinegar
2 tablespoons Soy Sauce
2 tablespoons Mirin
2 tablespoons Water

DIRECTION:
1. Grate the potatoes.


2. Grate the onion.


3. Add sweet potato starch and salt.


4. Add green onion, if using.


5. Mix well.


6. Heat up two tablespoons of vegetable oil over medium heat. Add the potato batter. Fry until crispy; about 3 minutes.


7. Flip the pancakes over, and fry the other side for another 3 minutes or until crispy.


8. Transfer the pancake to the serving plate.

9. To make the dipping sauce, combine all the ingredients for the dipping sauce. Serve it with the pancake.

The Fluffiest Vegan Pancake


Vegan pancakes don't have to be tasteless and hard.  These pancakes are super fluffy, and even fluffier than the non-vegan ones.  The key is in the small amount of vinegar and Flaxseed "egg whites".  Try to make your own version by playing around with the seasoning.  Enjoy!


INGREDIENTS
1 cup Whole Wheat Flour
1 cup All Purpose Flour
1.5 tablespoon Baking Powder
1.5 cups Almond Milk
1/4 cup Coconut Nut Oil (Odourless), melted
4 tablespoons Flaxseed "Egg White" (1 tablespoon Flaxseed + 4 tablespoons Hot Water)
1 tablespoon Vanilla Extract
1/2 teaspoon Apple Cider (or White Vinegar)
1/3 cup Raisin (optional)
1/3 teaspoon Salt
Maple Syrup (to serve)

DIRECTION:
1. Mix 1 tablespoon Flaxseed and 4 tablespoons Hot Water together to create "Egg whites"; set aside.

2. In a large bowl, whisk all wet ingredients together.  Add all dry ingredients into the wet mixture; mix it to combine as batter.  Leave it for about 10 minutes before use.


3. Heat up a non-stick skillet over medium heat.  Add a large spoonful of batter.  Patiently wait until the surface of the batter starts to bubble and slightly firm up.  Flip the pancake over and cook for another 2 minutes.  Turn down the heat if the pancakes brown too fast.


4. Repeat this process until all the batter is finished.  Serve them with maple syrup.

Rilakkuma Banana Pancake | 鬆弛熊香蕉熱香餅



Do you have any overly ripe bananas sitting on the countertop? If so, you can turn them into banana pancakes.  My son loves banana pancakes, so we always purposely buy extra bananas and wait for them to be "spotty".

Two bananas are sufficient enough to make a stack of pancakes of ten.  If you want to give your bear a little more "honey skin tone", you can add a little sugar in the batter.

1 1/4 cups Plain Flour
2 Eggs
1 Banana, soft or ripen
1 cup Milk
1/3 cup Butter, melted

DECORATION:
1 Banana
Chocolate Chips
Strawberries (optional)

1 杯   牛奶
1/3 杯   溶牛油

400 ml Coconut Milk
1/2 cup Sweetened Coconut Flakes
1 cup All purpose Flour / Plain Flour
2 tablespoons Flaxseed Meal
1.5 tablespoons Baking Powder
1/4 teaspoon Sea Salt
2 Eggs
4 tablespoons Butter (for cooking)
Maple Syrup (for serving)


材料: (3人份)
400 毫升   椰奶
1/2 杯   甜椰絲
1 杯   麵粉
2 湯匙   亞麻籽粉
1.5 湯匙   泡打粉
1/4 茶匙   海鹽
