Pan-fried Eggplant with Soy



Ingredients:
2 Eggplants, halved lengthwise
3 tablespoons Soy Sauce
1.5 tablespoons Sugar
3 tablespoons Ginger, grated
2 tablespoons Vegetable Oil
Sesame Seed for garnish (optional)

Direction:
1. In a small bowl, whisk together all ingredients except the vegetable oil and eggplants.

2. Add oil in a non stick pan. Place the eggplants in the pan with skin side up.  Turn on the heat to medium. Fry them for about 5 minutes.

3. Pour the sauce over the eggplant. Continue to fry until the sauce is absorbed, about 2 minutes. Sprinkle sesame seeds on top if using. Enjoy.

Korean Steamed Eggplant


INGREDIENTS:
2 Eggplants

SAUCE:
4 Garlic Cloves, minced
2 tablespoons Fish Sauce
3 tablespoons Soy Sauce
2 teaspoons Sesame Oil
1 teaspoon Sesame Seeds
1 teaspoon Chilli Flakes

DIRECTION:
1. Pre-heat the steamer over high heat. Steam eggplants until they are softened, about 10 minutes. Allow them to cool off.

2. In a mixing bowl, whisk together the sauce ingredients.

3. When the eggplants are cool enough to handle, peel them into thick slices. Gently mix them with the sauce with hand. Serve immediately.

Korean Steamed Eggplant


INGREDIENTS:
2 Asian Eggplants

SAUCE:
2 stalks Green onion, finely slices
2 Garlic Cloves, minced
2 tablespoons Soy Sauce
2 tablespoons Sesame Oil
2 teaspoons Sesame Seeds, toasted
1 teaspoon Sugar
1/2 teaspoon Korean Red Chilli Flakes
1/4 teaspoon Black Pepper, freshly ground

DIRECTION:
1. Set up a steamer to high heat.  

2. Cut both ends off the eggplants.  Cut the eggplants lengthwise and then cut it into about 7 cm pieces. Place the eggplants in the steamer and steam for about 6-7 minutes.

2. Meanwhile, mix all sauce ingredients together.  When the eggplants are ready, spoon the sauce evenly over the eggplants to serve.






Oven Roasted Miso glazed Eggplant | 味噌焗矮瓜


INGREDIENTS:
1 Italian Eggplant

Marinade:
1 tablespoon White Miso Paste
1 tablespoon Sugar
1 tablespoon Chinese Cooking Rice Wine
4 tablespoons Vegetable Oil

DIRECTION:
1. Preheat the oven to 400F.

2. Cut off the stem of the eggplant.  Half the eggplant lengthwise and place it on baking tray.

3. In a mixing bowl, combine the marinade together.  Brush a generous amount of marinade onto both sides of the eggplants.  Bake it for about 20 minutes until the eggplant is soft and golden.

Three of a kind | 煎釀三寶



Fried Pork Stuffed Vegetable is a dish my mom often made when I was little.  Besides pork, she liked to mix in a few water chestnuts to add a little crunch and a subtle sweetness, or she would substituted the pork for fish cake or fresh shrimp available in the fresh market.

In Canada, where we live, is not easy to buy any of the ingredients Mom had used except for the pork.  So, it is the way this version of the dish remains on our family menu.  Serve it with a bowl of steamed rice and enjoy the balance of the juices from the vegetable and the meat and I will call it a warm and substantial meal.


Three of a kind | 煎釀三寶  

Ingredients: (make about 23 pieces)
600 gram Pork
3/4 cup Chopped Shallot
1 Egg
2 Green Bell Peppers
1 Japanese Eggplant
450 gram Firm Tofu
2 teaspoons Rice Wine
1 tablespoon Dark Soy Sauce
1.5 tablespoons Corn Starch
1.5 tablespoons Sugar
1/4 teaspoon Salt
1/4 cup Vegetable Oil (for frying)
Green Onion for garnish


For the Sauce:
1 teaspoon Dark Soy Sauce
1/4 cup Water
1 teaspoon Chicken Powder
1/2 tablespoon Sugar
1/4 teaspoon Salt


材料:(約23件)
600 克   攪碎豬肉
3/4 杯   紅蔥頭
1 個   雞蛋
2 個   青橙籠椒
1 條   日本矮瓜
450 克   硬豆腐
2 茶匙   米酒
1 湯匙   老抽
1.5 湯匙   粟粉
1.5 湯匙   糖
1/4 茶匙   鹽
1/4 杯   菜油
蔥粒 (作裝飾用)


汁料:
1 茶匙   老抽
1/4 杯   水
1 茶匙   雞粉
1/2 湯匙   糖
1/4 茶匙   鹽

Deep fried Eggplant with Paprika and Sea Salt | 香炸矮瓜



If you don't mind to deep fry at home, this recipe will be an easy, delicious, and fit-for-budget option for your lunch and dinner.  Try to use a wide but deep frying pan to do the "shallow-pan" frying method.  It can fry many eggplant slices at one time without using so much oil.

Whenever I make this dish, I ensure I make a large enough portion to last for two days.  Overnight, the eggplant will become softer and the taste more integrated.  Eating it with a bowl of piping hot rice is happiness.

Other than paprika, you can serve it with scallion, fried shallot, five spice powder, or a dollop of yogurt.



Deep fried Eggplant with Paprika and Sea Salt


Ingredients:
2 Chinese Eggplants
Oil (for deep frying)
Paprika
Sea Salt


How to make it:
1. Rinse the eggplant.  Cut the eggplant into 2cm slices, diagonally.

2. Heat the oil over high heat.  Add eggplant and do not over crowd them.  Fry them until slightly brown on both sides.  Transfer them to paper towel.

3. Sprinkle with paprika and sea salt.  Serve hot or cold.
